Chinese New Year has particular significance for chefs John Connell and Jane Beesley – and not just because the food they make is currently being enjoyed by millions of people across the UK.

John and Jane, who work for Teesside-based SK Chilled Foods, were both born in the year of the rooster.

The pair are part of a team responsible for making millions of pieces of food that are supplied to some of the UK’s biggest supermarket chains for Chinese New Year.

This includes hundreds of thousands of spring rolls, wontons, and pieces of prawn toast, alongside popular Oriental favourites such as lemon chicken and spare ribs.

Chinese New Year is one of the busiest times of the year for SK Chilled Foods, although the preparations for 2017 started immediately after the 2016 New Year.

John explained: “We develop the products well in advance because we need to test out various recipes, and try new things, before they are presented to our supermarket customers.

“Depending on what supermarket you shop in, the spring roll you buy could very different to the one someone else buys in another supermarket because it’s all down to the exact preferences of our customers.”

Jane added: “The Year of Rooster has just started but believe it or not, in the development kitchen we have already turned our attention to 2018 and the Year of the Dog!”
