It’s International Carrot Day.

Yes, you heard right, we have an entire day devoted to an orange vegetable.

We’re all for it here in the SK kitchen, after all it is a staple in many of our dishes. It would be impossible to make a vegetable samosa or a spring roll without them and as we make millions of these each year, it’s fair to say we get through quite a lot of carrots!

Aside from tasting great in pretty much anything, here’s just a few reasons why you should nibble on more of them:

  • Whilst it’s not true that they can help you to see in the dark (hey, but it’s a great thing to tell the kids to get them to eat more), they do contain a high level of beta-carotene, which the human body converts into Vitamin A and this helps protect the surface of the eye from any future damage.
  • They contain an antioxidant known as carotenoid which research shows can help to fight cancer.
  • They also contain alpha carotene and lutein, both of which have heart-protecting properties.
  • They also contain (yes it’s the vegetable that keeps on giving) Vitamin C which can look after your skin.

So, on International Carrot Day, how about the following for breakfast, lunch and dinner:
Breakfast – Carrot smoothie
Lunch – Carrot and coriander soup
Dinner – Roast chicken dinner with lots of carrots
Dessert – Carrot cake (what else?)
